How long do LiPo batteries last... and are old ones safe to use?

I’d test their voltage first. If it’s dropped below 3v, they might be done for. Anything over that should be okay to try out.

Good point. I’ve had some drop too low in storage and they were toast.

What if there’s no voltage reading at all?

If there’s no reading, they’re done. Best to recycle them safely at that point.
