How much more 4K 30fps footage can I get on a 1TB compared to a 512GB SD card for action cameras?

You can get about twice as much. 1TB = 1024GB = 512GB * 2.
Keep in mind:
In summary, redundancy is important. A 1TB card is nice, but there are advantages to having two smaller cards. I’ve had cards fail before, and having extra on hand is valuable.

If it only supports 512GB and you buy a 1TB card, it’s a wasted purchase. Assuming you’re referring to a consumer-level camera, a 512GB card can record about 6-7 hours of 4K 2160 video and a lot of still pictures.
