It’s about the same quality as a Samsung A51, so it won’t match modern iPhone standards (the iPhone sensor is 1/1.56", while the A51 and M3T are 1/2").
You’d buy the 3T mainly for its thermal camera, which serves specific purposes. It lacks the great main camera of the regular Mavic 3. You might want to check out some thermal drone reviews on YouTube to see if it meets your needs.

It’s not like night vision goggles. The thermal camera shows temperature differences with color gradients, letting you see a warm body against a cooler surface. If the temperatures are too similar, you won’t be able to see much, unlike real night vision goggles that amplify low light.
If you want to take nice pictures, the 3T isn’t the right choice.

It’s not that the photos are terrible, but the camera is built for inspections, not for capturing high-quality images. You won’t achieve the same quality as you would with a 3 Pro.
